This week I had a couple of parents ask me for some healthy snack ideas.

My usual go-to is anything fresh; celery, carrots or cucumber dipped in hummus. However, sometimes you just want a damn cookie! Or something cake-y.

I do cook a rather yummy, eczema friendly, banana bread from ‘The Eczema Detox’ book by Karen Fischer. However it tastes better toasted so it’s not ideal for lunch boxes.

But I’ve found just the thing! Almond & Oat Bars by Ballerina Bites.

Alexandra is an Australian born ballerina with the Stuttgart Ballet and has a fantastic blog called ‘Ballerina Bites’ full of fun snack and meal ideas for the health conscious. You can also follow her beautiful Instagram here.

These super easy Almond & Oat Bars are my favourite recipe from her collection because they’re SUPER easy to make (hello time poor people!) and you can pop them in a lunch box (hello parents!)…



1 ¼ cups almond meal

1 cup rolled oats

¾ cup unsweetened shredded coconut

½ cup coconut sugar

½ -1 tsp ground cinnamon

½ tsp baking powder

pinch of salt

⅓ cup coconut oil, melted

2 tbsp pure maple syrup

1-2 tbsp water to bind


Preheat oven to 170°C

Line a square brownie tin with baking paper.

In a large bowl thoroughly mix all dry ingredients together.

Pour in the melted coconut oil, maple syrup, water and mix thoroughly to combine.

Firmly press mixture into prepared tin, using the back of a spoon.

Bake for 15- 20mins or until golden brown.

 Allow to completely cool before slicing into bars.

Makes 9 – 12 bars.

Store in an airtight container for 1 week.
